cake rack

Set both dishes on a cake rack, or on something that will allow the air to circulate below the dishes.

Lay close together on a cake rack covered with wax paper and leave in a warm but not a hot place until crisp and dry.

When cold drain and lay them on a buttered cake rack or wire broiler and let them remain until very dry.

A rack may be improvised from a broiler, a toaster or a cake rack.
